Job Duties/Essential Functions:

  • Menu planning and development: lunch for 30 people Mon-Fri and dinner preparation for family members when needed
  • Works with Hospitality in the development of menu and cost proposals for daily lunches as well as special events including: family celebrations, holidays, business lunches & dinners
  • Purchases food and completes food costing on a regular basis for two kitchens
  • Works with garden team to ensure farm to table utilization. Including planning future planting, utilizing fruits and vegetables being harvested at peak or preserved for later use.
  • Works with Event Coordinator to coordinate needed staff, equipment, plates, flatware
  • Works with Event Coordinator on special events as well as Kendall Jackson Chefs on larger special events
  • Controls costs of events to stay within budgetary guidelines
  • Upkeeps standards set forth for the safety and sanitation of all food production and maintains a clean, organized and safe kitchen

Job Requirements:

  • Must be able to work some evenings, occasional weekends and occasional holidays
  • Must have a wide range of knowledge of all types of menus that include casual comfort food as well as formal fine dining
  • Must be able to lift 50lbs
  • Follows and enforces the Companies policies and procedures.

Education: Degree in Culinary Arts or the equivalent in education and experience

Wine Knowledge: A thorough understanding of food and wine pairing and the ability to articulate this knowledge

Experience: A solid background in restaurant catering with a proven track record of success

Computers: Intermediate experience in Mircrosoft Word, Excel & Outlook preferred
